2 teaspoons olive oil
1 1/2 teaspoons dried rosemary
1/4 teaspoon salt
1/4 teaspoon black pepper
8 skinless, boneless chicken thighs (about 1 pound)
1 (14.5-ounce) can stewed tomatoes, undrained
1 (15-ounce) can navy beans, drained
1/4 cup chopped pitted kalamata olives

This can be converted easily to fresh ingredients.

Heat olive oil in a large skillet over medium-high heat. Combine rosemary, salt, and pepper; sprinkle over chicken. Place chicken in pan, seasoned side down; cook 3 minutes. Reduce heat to medium; turn chicken. Add tomatoes and beans; cover and simmer 10 minutes or until chicken is done. Stir in olives.

Assuming your permission to do so , I've saved this to my recipe folder. A great sounding quickie.
 
I might give this a try with both chicken breast and thighs. Stirling doesn't like dark meat or wings (they are too fiddley for him). I, on the other hand, prefer dark meat and love wings. Makes sharing a chicken easy.
 
Shrek is learning to like thighs, much easier for him to chew. I just make sure his chicken is boneless and skinless.
