My question is: if salty pork van be called bacon or ham then what would be the correct term for salty hen. This recipe is quite simple: take one hen past the point of lay; cook it and then salt it. Serve it hot with boiled rice.

Call it whatever you want. The process for bacon or ham is nothing like your recipe.
 
To those of you who are not into chicken on the bone or perhaps you would just like to know more about curing hens, I will give you an account of how much I love to eat chicken. Today we had Salty Hen for the first time in about two months and it was delicious as ever. For starters, we had home made Pheonix Claws (chicken feet) and to cap it all this evening we will have Coke-Cola Chicken Wings. More later...
