My kids love this and we make it and serve it with white rice..All dumped together in a bowl, looks messy but tastes yummy. Take one good sized boneless chicken breast and slice it then put it into a bowl with one eggwhite,some salt and pepper, 1 tea. cornstarch and 1 tab. dry sherry. Mix together and let sit about 10-15 min. Heat 2 tab. oil in a wok or skillet..Saute about 1/4 of a lb of mushrooms,2 stalks of sliced celery,one can of drained sliced water chestnuts about 2 min. Then remove from the pan.Heat 3 more Tab of oil in the same pan and stir-fry3 cloves of minced garlic and 4 green onion sliced and your chicken that you've removed from its marinade, over high heat for several minutes..Add some soy sauce and sugar and toss..Add back the veggies for about 1 min to heat them and then put in your serving dish...
My kids then get a bowl, put in rice and top with the chicken veggie mix adding a little more soy sauce...
