Heat 2Tab. veggie oil in a casserole and saute about a 3 lb. cut up chicken til browned about 15 min.. Pour off all the cooking fat. Add 1/2 c. each chicken stock and OJ, 1 c. fresh tomato peeled and chopped. Remove seeds if you wish.and add in 1 Tab. finely sliced ginger root.Season with salt and pepper Cover and simmer til chicken is tender 15 to 20 min or so. Is great over rice and sprinkled with fresh cilantro..
Serves 8, all in all it takes about 20 min to prep and 30 to cook.
