TNT - My favourite chicken recipe

I love this recipe - it's quick and easy, only one pan and dish to wash up and it tastes divine:

Oven baked chicken with mushroom pilaf (serves 6)
6 chicken drumsticks & 6 chicken thighs
Salt and freshly milled black pepper
45ml oil
1 onion chopped
250g fresh brown mushrooms - sliced
100g bacon - sliced or chopped
250g/300ml basmati rice
750ml chicken stock
50ml dry sherry
45ml japanese soy sauce (can use any soy sauce if you don't have japanese)
5ml sesame oil
3 cloves garlic -crushed
15ml fresh finely grated ginger

Preheat oven to 200 degrees celsius.
Season chicken with salt & pepper, heat oil and brown chicken.
Take chicken out of pan, add onion,mushrooms,bacon to pan and saute until onion is soft,add rice and mix through.
Dish into oven dish and place chicken on top.
Mix stock,sherry,soy sauce,sesame oil,garlic and ginger and pour over chicken.
Place uncovered in oven and bake for 1 hour until chicken is done and fluids are absorbed by rice
