I bought an extra turkey this year, because it was so cheap. I'm not able to deep-fry a whole turkey this year. I'd like to cut it up and pan fry it. Will this work? I think it'll have to go in the oven after I get it good and crispy. Has anyone ever tired this?

How much does it weigh? I can imagine pan frying pieces that large myself.

Why don't you just put the cut up turkey in the oven at high heat to get it nice and crispy, then turn the oven down to cook it through?

It's 12#

I have a lot of old oil to use up and I was curious to see if I could mimic a fried turkey in a skillet.

Why not? Just pretend its fried chicken. Do it the same way except cut the turkey into smaller pieces.

Have you considered braising it in a BBQ type sauce?
I buy turkey thighs and braise them in beer or stock until very tender. I then add bottled BBQ sauce and thicken. Its very very good.
Make mashed potato's and spoon the turkey flavored BBQ sauce over them. So good. And very tender.
