A Healthy Muffin
All dry ingredients in one bowl All wet ingredients in one bowl
2 1/4 oat bran cereal 1tlbs baking powder 1/4 cup brown sugar or maple syrup
1/2 cup chopped walnuts or pecans 1 1/4 skim milk 2 ripe bananas mashed
2 beaten eggs 3tlbs canola or grape seed oil 1 1/4 cinnamon
bowl l: mix dry ingredients bowl 1: mix milk banana eggs and oil then add to dry ingredients DO NOT OVERMIX TO THIS MIXTURE YOU CAN ADD: dried pineapple, choc bits, raisins,dried cranberries, whey protein powder, carob powder, chia seeds,ginger. You can add any combination. Stir. Medium
dough. Fill muffin tin...they do not rise. 425 degree oven 15-17 minutes.
They never fail. I cool...place each muffin in a small plastic bag and refrigerate.
