Cinnamon muffins

:chef:Cinnamon muffins are my favourite evening snack with a cup of hot coffee
Ingredients:
2 medium eggs.
3 cups of flour.
1 cup of milk.
1 cup of sugar.
5 tablespoons of butter.
5 tablespoons of shortening.
3 teaspoons of baking powder.
1 teaspoon of salt.
1/2 teaspoon of nutmeg.
1 tablespoon of cinnamon.
Procedure:
1.Grease 12 three-inch muffin pan cups.
2.Cream together the butter, the shortening and the sugar.
3.Beat in the eggs, salt, nutmeg,cinnamon and baking powder.
4.Stir in the flour and milk alternately until mixture is just combined.
5.Fill muffin cups to the half.
6.Bake at 350F oven for about twenty minutes.
7.Allow to cool for a few minutes.
8.Muffins are ready,enjoy it with hot coffee.

My boyfriend loves cinnabon rolls... I think I'll make these for him with a simple frosting for a valentines day breakfast! :) thanks!

question - calling for both butter and shortening, have you ever tried using the butter flavored shortening in them and then use just the shortening. Just wondered how it would be.
 
Funny, I just looked over this recipe and was wondering if it would hurt to make it with just butter.

I don't use hydrogenated fats; I do have some palm oil, sold as non-hydrogenated shortening, but I'm told that gives different results in most baking than the other stuff.
 
Well it is a batter not a dough. I am not sure that the 50/50 is required. Hmmm. I just followed the directions exactly this time as I did not want to get off base YET.
 
These sound great. I have similar recipe I got from my Mom. She calls them donut muffins - I guess because of the nutmeg and cinnamon.
