Why is it that my muffins and loaves never turn out dark? Whenever I use bananas to make banana bread or other things, my muffins and loaves are light in color. My bananas are rotten, as they should be when baking but is there something i am missing? I want to make banana bread and I want my bread dark. Suggestions?!:ermm:

First of all, bananas should NOT be rotten but ripe in order to make banana bread. If you'd like a dark loaf or muffin, add about 1/4 cup of molasses to your recipe. I sometimes use 100% dark maple syrup to darken it. If you feel it will be too sweet, then take out about 3 to 4 tablespoons of sugar from what the recipe calls for and add the 1/4 cup of molasses or dark maple syrup. Good luck and hope this is helpful to you.

how long are you baking them? maybe they aren't really done well. they don't have to be so dark.
