ISO Cornbread Recipe

I'm looking for a recipe, but I don't know what to call it. It tastes like corn bread, but it's a kind of a gritty pudding-like texture. That is, a corn bread that can be scooped and eaten with a spoon. And there's chunks of corn still in it. If anyone has any idea...

Edit: It's served at the Mexican-American restaurant Don Pablo's if anyone has been there...

I am going to split this from the other thread and try to give you an answer.

Did you see this recipe from Kitchenelf for cheesy spoon bread?

BEAN AND PASTA SALAD

I have made this several times, and it rocks! I think thats what you are looking for.

Wow, that sounds pretty promising! And, whether or not it's exactly what I mean, it sounds like something delicious! I'm going to make some of this! Thanks for the help!

it sounds like a spoon bread to me...with mexican additions... a really good basic source of recipes of all kinds is the new all purpose joy of cooking.

my fave corn bread is naught but cornmeal buttermilk eggs salt leavening bacon grease and a hot skillet.
