problem that machines are different and alot depends on the machine, how it distributes the batter for example, etc.

I bought a doughnut pan a while back and it came with this recipe for cake doughnuts:

Cake Doughnuts
  • 2 cups cake flour, sifted
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp ground nutmeg
  • 1 tsp salt
  • ¾ cup buttermilk
  • 2 eggs, lightly beaten
  • 2 Tbs butter, melted
In a large mixing bowl, sift together cake flour, sugar, baking powder, nutmeg and salt. Add buttermilk, eggs, and butter. Stir until just combined. Fill each doughnut cup approximately ⅔ full.

Bake 7 to 9 minutes, until top springs back when gently pressed. Let cool in pan for 4 to 5 minutes before removing. Finish doughnuts with chocolate glaze, cinnamon sugar or confectioners sugar.
