Mulberry or gooseberry muffins

INGREDIENTS flour
2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
1/2 cup whipped cream
1/4 cup skim milk
2 tablespoons applesauce or strawberry sauce
2 eggs
1/2 teaspoon vanilla extract
2 cups mulberries/gooseberries



Let's start..:

Preheat oven to 400 degrees F (200 degrees C).Grease 6 jumbo muffin cups or line with paper muffin liners.
Combine flour, sugar, baking powder, soda and salt. In a medium bowl, mix together whipped cream, milk, applesauce or strawberry sauce.. it depends on your taste, 2 eggs and vanilla extract. Stir in flour mixture until batter is smooth. Fold in mulberries or gooseberries. Spoon batter into prepared muffin cups.
Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of a muffin comes out clean.
Pour grinded sugar on top of each muffin.
