Since I am not a milk drinker, only cook with it, I keep a small box of powdered milk on hand. The only thing that I can think of to use is powdered coffee creamer mixed with water????

If you have powdered milk on hand, try that. I've used it before with success.

Pretty much any coffee creamer should work, even those sweetened once, because it is muffin it should not be bad.

I have been perusing muffin recipes lately, and not all of them call for milk. I'm sure fruit juice will work fine, and probably other liquids as well.

I keep powdered and evaporated milk on hand as well.
