Oatmeal Muffins

1.5 cups buttermilk(or soured)
1 cup oatmeal (flake is best)
4 tbsp melted butter
1/2 cup honey or brown sugar
1 egg (beaten)
1 cup flour
1 tsp baking powder
1/2 tsp baking soda

Soak the oatmeal in buttermilk for 30 minutes. Mix butter, honey(sugar) and egg then add the oatmeal mixture and stir til blended. Sift dry ingredients together and add to wet. Stir just enough to incorporate. Makes 12 muffins. Bake at 400 for 12-15 minutes.
