I started with a basic recipe for oatmeal muffins, made improvements (IMO), and am now playing with variations. Perhaps you all will have some suggestions?

Oatmeal Muffins
1 cup sifted flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup Splenda
1 cup + 2 tablespoons uncooked rolled oats
3 tablespoons oil or melted shortening
1 egg, beaten
1 cup skim or fat free evaporated milk

Sift together dry ingredients except oats. Pulverize oats in a food processor, then stir into sifted mixture. Mix in oil, egg and milk. Fill greased muffin tins 2/3 full. Bake in pre-heated 425 oven for 15 minutes. Makes 1 dozen muffins.
If desired, combine 2 tablespoons each: Splenda, flour, pulverized oats, butter and 1 tsp cinnamon and sprinkle over top before bacon. Or, just sprinkle tops with cinnamon/Splenda mixture, or just Splenda.


Variations:
*Add about 1/3 cup of any or all of the following: raisins, nuts, chocolate chips
*Delete oil and replace with unsweetened applesauce
*Add 2-3 tbls cocoa and 1 tsp vanilla
*Replace milk with juice, 2-3 mashed bananas, crushed pineapple or applesauce
*Add 1 tsp orange or lemon zest


Variations I'm thinking of trying:
*Add sugar free pistachio pudding mix and chopped nuts
*Put marshmallow in the middle (or would it just melt and run through?)
