Snip's Cheese and Herb Loaf
1lbs 2 oz of self- raising flour
8 oz of cheddar cheese (cut into cubes)
1 tbsp of chopped fresh mint
6 eggs (whisked)
8 fl oz of whole milk
1 tsp of salt and 1 tsp of cracked black pepper
Paprika for dusting
Sift flour and salt together, add pepper. Mix eggs, milk, mint and cheese well. Mix egg mixture with flour mixture. Spread batter evenly in a greased square 8 inch cake tin or loaf pan. Dust with paprika.
Bake for 40-50 mins or until golden on top in a preheated oven at 350F.
Serve with butter as a side to BBQ meats or with soup.
