Have any truffle oil? If so mix some of it with 4oz. goat cheese and fresh herbs of choice, parsley,a pinch of marjoram add truffle oil mix well. this should make 2 servings. You need 2 serving size squares of fresh focaccia, 1 ten oz pack of spinach Chop the spinach fine after cooking in salted 1/4 cup of water press in towel to remove as much water as you can.Now place the greens in bowl.Add the cheese and mash the spinach into it. now you can add the truffle oil a drop or two Cut the focaccia in half horizontally.Spread the mixture on the inside of the focaccia put on the tops preheat you press put the sammies in the press andcook 4-5 min or til golden.turn after browning one side do the other serve hot and enjoy You can use any greens you prefer, prosciutto is great in here or any meats and Italian cheeses.

This does sound lovely Ma :)

Truffle Oil is quite expensive over here, so we have never used it, I have heard it tastes lovely though
