Pizza Sauce

I really like making this sauce for pizza, its a lovely fresh mix of plum tomatoes, oil, fresh thyme and oregano (from my garden if you please!), garlic, onions, and malt vinegar.

You slow roast the mix in a low oven (Gas Mark one, I don't know what this is in american money). Its a low heat for a good hour and a half.

Then blitz it. Fab.

I agree, it does look very good. I almost always make sauce from canned ("tinned" to you, GQ) San Marzano tomatoes. In fact, I'm whipping up a batch tonight. I've never tried fresh, though.

Gas mark 1 is about 275F.

@ Gravy Queen,

Lovely handle on Pizza Sauce and " WOW " on photos ... Thanks for posting. I do mine very similarly ...

The product, Malt Vinegar is not too readily available in the Mediterranean ( Madrid Capital or Puglia, Italia ) ... so I use a spritz of White Balsamic Modena. Also, a pinch of Basil and very light sprinkle of Freshly ground Black Peppercorn ...

Thank you all for your lovely comments.

Have a jolly old weekend. Here in Liverpool this weekend, we have a big horse race on called The Grand National and we also have our 2 big football teams (Liverpool and Everton) playing at Wembley in London, for erm, some cup.
