I really like making this sauce for pizza, its a lovely fresh mix of plum tomatoes, oil, fresh thyme and oregano (from my garden if you please!:yum:), garlic, onions, and malt vinegar.

You slow roast the mix in a low oven (Gas Mark one, I don't know what this is in american money). Its a low heat for a good hour and a half.

Then blitz it. Fab.

I agree, it does look very good. I almost always make sauce from canned ("tinned" to you, GQ) San Marzano tomatoes. In fact, I'm whipping up a batch tonight. I've never tried fresh, though.

Lovely handle on Pizza Sauce and " WOW " on photos ... Thanks for posting. I do mine very similarly ...

The product, Malt Vinegar is not too readily available in the Mediterranean ( Madrid Capital or Puglia, Italia ) ... so I use a spritz of White Balsamic Modena. Also, a pinch of Basil and very light sprinkle of Freshly ground Black Peppercorn ...

Have a jolly old weekend. Here in Liverpool this weekend, we have a big horse race on called The Grand National and we also have our 2 big football teams (Liverpool and Everton) playing at Wembley in London, for erm, some cup.
 
I always use basil for my pizza sauce, thanks for the idea, i will try thyme one of these days

Quintuplets you are a heretic the only two big teams on Mersyside are LFC owned by the Americans and Tranmere Rovers.

Really? I always found Guy Williams lacking sincerity in the role. My favorite is the Tyrone Power version (1940) with Linda Darnell as Lolita and Basil Rathbone as the quintessential villain. I will still stay up late to watch it whenever I see it listed on one of the classic movie channels.

Tyrone Power was phenomenal too and I had seen the wonderful film u mention ... however, he specialised in film ...

I had been thinking in tv.

Tyrone was also wonderful in a Hemmingway classic starring Eva Gardner, FIESTA in Spanish or " THE SUN ALSO RISES " ... a fave film of mine. He portrayed Hemmingway ... Good film.

I agree ... the classic mysteries too ... Agatha Christie ... Big Fan. Murder on the Orient Express, a favorite of mine ... The Hounds of the Baskervilles ... Really like Basil as Sherlock ... Wonderful intrepretation of character ... Nigel too, though I forget the actor´s name --- Bruce ? Do you recall Addie ?
