this turned out really great when i made it a few weeks back. buckwheat pancakes meet tarte tatin.
peeled & sliced 3 or 4 apples. arranged 1 layer in cast-iron pan & set on low flame with hefty amount of butter.
made usual pancake batter with 1/2 white & 1/2 buckwheat flour.
sauteed remaining apples on high heat to get some caramelizing going on the surface while keeping them firm. added some brown sugar, butter, cinnamon & splash of vanilla at end.
sprinkled some brown sugar on the artfully arranged apples, along with another couple of knobs of butter. topped with the rest of the sauteed apples, poured in the buckwheat pancake batter and popped into the oven at about 350°.
about 15 minutes later, pulled it out and overturned it onto a large platter.
it came out picture perfect. apples nicely caramelized. we didn't need to use any syrup or butter.
