Let me add to this. No you don't have to use a cold water bath. If the potato's turn color its not a big deal. Once you ring them out (dry) in a clean dish towel they will turn white again.
Everything's chilling, and ready to go. I found out I only had one egg, but I had just made Chef Maloney's salad dressing yesterday, so guess what! I put an egg's worth of CM's salad dressing in the batter. Tastes great so far!
