Cod with Mustard Sauce

you need 4 cod fillets about 8 oz.each sprinkle with s&p now dust with a/p flour. Melt 4 tab. of the 6 oz we need for the fish. in a large skillet. cook the fillets 2 min on each side or til done then keep warm. Pour off any butter remaining in skillet then melt the remaining butter in the skillet add small chopped shallot and saute 1 min. add 1/2 cup vermouth,1-1/2 ta. capers and 2 Teas.Dijon cook rapidly scraping up browned bits now add 1/2 cup creamstir occasionally til sauce thickens spoon sauce over fish and serve right away.

Tab of butter start by using 4 Tab. cook fish browinng both sides then remove from pam I just use a double thickness of paper towels to clean out the skillet then I add the rest of the butterthe shallot and vermouth,capers, rest of ingredients cream etc to scrape up the brown bits. then pour the thickened sauce over the fish.Did this help? Hope so I don't know how to help you more.
