My first fish searing!
First I let the iron skillet heat up with extra virgin olive oil right until it started smoking. then I went ahead added my pre chopped green onions, 1 clove garlic, and a teaspoon of capers, I let the garlic get sweet and I let the onions turn oblquic[sp?]. Then I added my tipola fillets on top of the onions, capers, garlic, I let the fish get oblquic and then I took it off the heat.


It was so dang good, the capers give it a weird but very cool flavor.
