Pesto and Garlic Shrimp

Oh, this sounds heavenly! Good thing PeppA doesn't seem to be to crazy about Pesto (I love the stuff).

Pesto and Garlic Shrimp
Servings: 1

2 oz garlic butter
6 shrimp
2 oz diced red bell peppers
1 oz pine nuts
1 oz white wine
3 oz pesto
2 oz heavy cream
2 oz Parmesan cheese
6 oz angel hair pasta, cooked al dente

Sauté shrimp, bell peppers, pine nuts, in the garlic butter until cooked, approximately 2 - 3 minutes. Add the wine, pesto, heavy cream and Parmesan cheese and cook for 1 minute. Place the cooked pasta in the pan and toss to coat and heat. To plate, roll the pasta into a ball with fork or tongs and place in the center of a plate. Stand the 6 shrimp around the pasta and top with the garlic/pesto sauce. Garnish pasta with parsley.
