Salmon, Cauliflower, Grapes

Forgot my digital camera at home, so I had to resort to using the camera on my phone.

Pan Seared New Zealand King Salmon
Marinated Grape and Fennel Salad, "Whipped" Cauliflower with Truffle Essence, Port-Balsamic Gastrique, Yukon Gold Potato Puree

I always appreciate that you include pictures of your creations. Your plating always looks great, and your flavors always sound unique. Best of all, I like when I can see things like the sear on that salmon. Looks great!

This was one of those flavor combinations that was out of left field, but everything worked together. Ideally, I wanted to serve this with pan roasted halibut, cod, or Chilean Sea bass but they weren't available, or the cost was too high for just a special. I really had halibut in mind though when I was thinking of the flavors.
