abjcooking...this is the shrimp that I made for the first time last night. It was WONDERFUL!!!! I followed the recipe pretty closely for a change. The only difference was that while I like basil I don't really LOVE it so instead of 1/4 cup I only used 1/8th cup. Perfect. Next time I'll add more shrimp since that was the very best part. I might also add some diced sweet red pepper just to make it more colorful.
2 Tablespoons unsalted butter 1 1/2 cups corn kernels ( from two ears fresh corn) 1/2 pound fresh shrimp, peeled and deveined 4 scallions, chopped 1/4 cup freish basil leaves, thinly sliced Melt butter in a 12 inch nonstick skillet over med. high heat. Add corn and shrimp and cook stirring, until shrimp are cooked through. About 3-5 minutes. Stir in scallions and basil and then season with salt and pepper. That's it. EASY and Delish!! |
