In a large skillet or wok heat 2 Tab. peanut oil. Add 1 lb. extra large shrimp, clean and devien or get the butcher to do this for you.also add,1/4 cup diced green and white onions,2Tab fresh grated ginger.and 3 cloves of finely minced garlic. Stir-fry the shrimp til pink. Add 2 Tab. dry sherry,2 Tab. soy sauce,2 tea. sugar,1/2 tea. salt, Stir well then blend in 2-3 Tab. Catsup,2 Tab. chili sauce,and 1 tea red chili flakes. Serve over piping hot white rice, top with cilantro pieces or parsley.
