Crab Stuffed Shrimp
16-20 large shrimp
1 cup crab meat
¾ cup bread crumbs
½ cup diced onion
¼ cup red bell pepper
¼ cup green pepper
1 egg yolk
2 tbsp butter
½ tsp chopped garlic
1 tbsp Dijon mustard
2 tbsp mayonnaise
1 tsp Worcestershire Sauce
Salt and pepper

Finely dice onion, red pepper, and green pepper. Sautee in butter along with the chopped garlic. Add crabmeat and mix. Remove from the heat and add the bread crumbs and remaining ingredients, mix well. Season to taste (I usually add a pinch of garlic powder).

Peel, devein, and butterfly the shrimp. Stuff each shrimp with crab stuffing.

Bake at 350 degrees until golden brown; about 8-10 minutes.

Variations: depending on my mood, sometimes I use Italian bread crumbs and sprinkle each shrimp with fresh parmesan before baking.
 
I've tried and tried and tried and tried. The problem is not the filling; crap crab on the shrimp filling. The trick is I can't grasp how to butterfly a teeny shrimp, top it, bake it, keep it whole, without it curling. There must be a technique which I've never learned, or I'm just a crazy internet fool to keep trying...

When I butterfly my shrimp, I cut along the outside curve about 3/4 of the way through. If you are having trouble with them curling up you can try pounding them flat before you stuff them. Just a thought.
