A favorite of the little kids and I enjoy it as well. It can be made ready a few hours ahead of time then popped in the oven to cook.
Try it with sauteed potatoes or even some onion flavored white rice.A green salad your set.
Preheat oven to 400.Melt 3 Tab butter in a heavy skillet and lightly saute 1 med yellow or white onion sliced and about a half lb. of sliced mushrooms til soft about 5 min. Butter a shallow baking dish and cover the bottom with half of the onion mix. Sprinkle with 1/2 c. grated Gruyere reserving the other half. Fold each of 4 sole fillets in half and arrange over the onion mix slightly overlapping. Top the fish with the remaining onion mix and other half of cheese. Season with salt,pepper and a little paprika. Bake for 20 min then brown the cheese under the broiler. Garnish if you want with fresh chopped Italian parsley. Serve right now.
