TGIF! After a few days of calorie-laden food, I decided to prepare my DH's favourite wholesome soup, Psarosoupa (Greek Fish Soup) for lunch. As usual he polished off most of it. In case some of you are not in a mood to prepare something elaborate, here is my mother-in-law's recipe of an easy one-pot hearty soup.

PSAROSOUPA

Ingredients:
1/2kg fish (red snapper, sea bream or any types of rock fish)
3 medium-sized potatoes -cut into quarters
4 small onions - cut into halves
4 small carrots - cut into halves
1/2 cup celery leaves or 2 celery stalks (cut into 2-in pieces)
2 tomatoes - cut into quarters
1/4 cup olive oil
6-7 cups water
Salt
Pepper

Method:
Clean the fish and wash them thoroughly. Put onions, carrots, potatoes into a saucepan and add water. Bring it to a boil and allow to simmer until almost soft. Add tomatoes, celery, fish, olive oil and seasoning and continue to simmer until the fish is done and the soup is reduced a little. Serve with garlic bread. Kali Orexi!

Aside from the garlic and olive oil, that is the same soup my great-grandmother, the wife of a Maine fisherman, made for her family. Isn't amazing how many similarities there are between certain dishes of various ethnicities?
