I recently found an old copy of the book Diet for a Small Planet by Francis Moore Lappe buried in a bookcase. Tonight I made the following recipe from that book:

Cashew Gravy
Ingredients
1/2 cup cashews
1/2 cup water
2 T. non-fat milk powder
1 t. lemon juice
2 T. whole wheat flour
2 T. grated coconut (optional)

Instructions
Combine all ingredients in a blender and blend until smooth. If desired, add additional water to adjust consistency.

To use, heat and serve over veggies or grains. I served it over a mixture of chopped tomatoes, steamed broccoli and couscous. Delicious!
 
Hmmm...I have 2 copies of that (1 of which I keep meaning to put in the box for the Goodwill, but keep forgetting). I'll have to check it out!
