A lovely meat free lasagne , the filling is a layer of cooked, mashed sweet potato topped with a layer of spinach mixed with ricotta and seasoned well with salt and pepper and nutmeg . A sprinkle of toasted pine nuts in between the layers for some crunch and texture . Topped with a cheese sauce and some mozzarella .

I may make this but add some beef mince as well

or instead some chopped, dry-sautéed mushrooms if you want to keep it vegetarian.
 
I know this is an old thread but I have just returned to being a vegetarian and thought I would check out the forum.

This looks really good. Will have to give it a go! I am limited on cheese I can have but will work it out.
 
My wife and I eat a LOT of vegetarian meals and this one looks wonderful since we both enjoy sweet potatoes in a variety of ways. I wouldn't have thought of nutmeg as a seasoning. Perhaps a little smoked paprika. Thanks!
