Teriyaki Salad with Tofu

Serves 4.

This Japanese-style marinade works especially well for tofu.

• 1/2 c. low-sodium soy sauce

• 2 tbsp. olive oil

• 2 tsp. packed brown sugar, or to taste

• 2 tsp. grated fresh ginger

• 6 garlic cloves, finely minced

• 1 red bell pepper, chopped

• 1 c. chopped broccoli florets

• 1/2 c. chopped carrots

• 2 green onions, chopped

• 3 tbsp. chopped flat-leaf parsley

• 4 oz. extra-firm tofu, cubed

In medium bowl, combine soy sauce, oil, brown sugar,
ginger and garlic.

Add bell pepper, broccoli, carrots, green onions and
parsley. Toss well to coat vegetables with marinade. Add tofu and toss gently. Let stand at room temperature 30 minutes, stirring occasionally.
