tomato free Ratatouille

My wife is on a renal diet and can't have tomatoes. I would like to make a crock pot Ratatouille with veggies like zucchini, yellow squash, various colored (green, red, yellow, etc.) sweet peppers, onions, olives and eggplant.

I have checked out dozens of Ratatouille recipes and they all use tomatoes in various forms. How does it taste without tomatoes? Is there a substitute?

They all use eggplant with some recipes doing the old procedure of salting slices, wait 1 hour, press out moisture, rinse with water and pat dry.
One cook said that was unnecessary because modern eggplants are less bitter than those or years ago. Is this correct?

It's a vegetable casserole, put whatever you want in it. It will taste great, just different.
