Finally received my "How Can It Be Gluten Free Cookbook" from America's Test Kitchen.

Yahhh, Classic Sandwich Bread, here you come!
Gathered up all the ingredients, mixed away, set it aside to rise came back in just under an hour to check and .... oh my....

It had risen far far more than they said it would. I just stared at it. What to do - what to do. Can't punch it down - it is gluten free after all. So went ahead and stuffed it in the oven.

It is edible but I would not even stretch the limits and say it is sandwich bread. Toasted is good, at the bottom of the bowl with chicken stew on top also. I will find other things but am sorely disappointed. Will try again but meanwhile have to figure out how to use this up without getting tired of it.

Instructions are for a foil collar as the bread does rise over the edge but from their pictures, certainly not like this!

Instructions are for an 8 1/2 by 4 1/2 pan, if using a 9 x 5 the dough will not rise as high.

So of course, I followed their instructions.

Here is this mornings toast and then the picture from the cookbook.

May even just go back to gluten bread and put up with the pain.:wacko:

I'm not celiac but do find gluten free seems to help with the inflammation in my arthritic joints a bit, not as much as I had hoped, but a bit.

Also seem to have developed a sensitivity to eggs and sulphates. Well I have my own egg layers and I make my own wine. At least making my own wine I can control the sulphites.
But my eggs... sigh, just sell them, no more for breakfast.

the other day I did bacon, hash browns, mushrooms, onions, tomato slice (which I'm also sensitive to but one slice once a week doesn't hurt)... and then sat and just looked at the plate. no egg :( so :ROFLMAO:get over the pity party dragn and eat whats yuh gots! :ROFLMAO:

Mrs D went for an allergy test and found out she is allergic to egg yokes.
She buys "Egg Creations" which is an egg substitute. You can only make scrambled or omelettes, but I also use it to make egg noodles or spaetzle. Any recipe that calls for eggs I use this stuff.

We are starting out with a Rhumatologist (?) Trying to make sure it is not Lymes. But you know our wonderful medical system. He has received the blood tests, if he deems it urgent I will see him in maybe 6 weeks. If it is not urgent it will be 4 to 6 months before they call me.

Thank you for the suggestion, I will send a message to my doc for a specialist in allergies.

l've been sensitive to lactose for years and never knew it. It was only recently that being on meds for acid reflux I realized all those years I was drinking milk to calm the burning in my stomach - thinking more along the lines of ulcers and wondering why it never really helped.... duhhh.... Dr. Dragn be ashamed of yourself for the self diagnostics!

I just think it would be a dirty rotten shame to not be able to eat your own hen eggs. I'm sure CWS would agree. Fresh egg eating is worth fighting for!

too funny Greg Who Cooks! Actually once I had a fungus infection on my skin and couldn't get a strong enough anti-fungal over the counter. Went to my horse vet and got it from him. That jumped started the treatment and then just got the OTC after.

Reason I went to the vet?..... it was a 2 year wait to get an appointment with a dermatologist.

My SIL needed an ankle fusion - 6 year wait and the operation would be free or pay $7,000.oo and have it done in less than a month!

I know about pets and vet meds. Actually I've had a dry scalp problem and there's a medicated shampoo that the FDA won't let be sold over the counter, but my dog has the same problem and dog shampoo has the same ingredient in the same amount that the FDA won't allow for sale to humans.

I keep forgetting to try it. My doctor said don't use it more than 2x a week max.
 
I've found I can't depend on the instructions included in many recipes. I would have checked before an hour to see if the loaf had risen long enough. Most "instructions" that include times are what worked in the test kitchen. My kitchen tests might be completely different. Better luck next time.
 
Oldvine: normally I start out checking at 30 min and then 15, 10 etc. I'm always anxious to get it in the oven. Plus my house is heated with a wood burning stove so the temps fluctuate a lot, I like to make sure it is even raising to begin with. Well, I got busy and the sun was in the kitchen and...

Addie: I usually try to follow the instructions exactly, at least the first time. I used the smaller pan as recommended. Especially as this is G-F bread where height is often a problem (or at least keeping it up!)

I will try again. The most I can do with this loaf is make toast. It is far too crumbly and dry to make a sandwich. I'm trying to immulate, emmulate COPY a loaf called Udi (or something) I can make a sandwich out of that - especially grilled cheese, yummmmm.

Well since this time it will be your second time, try using the larger one. You just might get better results. :angel:

Hell's teeth - and I thought waiting lists in the NHS were bad.

Not sure if it still applies but about 20 years ago I read that in UK it's illegal for a (human) doctor to treat an animal but perfectly OK for a vet to treat a human. Odd. Also, if you go to the pharmacy to buy something over the counter, such as cough mixture or nappy cream for your horse's cough or sore skin, you must never tell them that it's for an animal because they aren't allowed to sell human products for animal use.
