I am making a sauce which recipe calls for some beef drippings/grease. I know that this will add some flavor, but i don't want the calories, etc. What can I substitute for this? Organic shortening? Anything else? Thanks.

You can substitute any other kind of fat including oils, shortening or butter but they will all have essentially the same calories.

What Andy said, but I gotta ask...How/What for.. is the beef fat/drippings used...Could it be that you could just leave it out completely and not affect the end product??

Thanks. The replies reinforce what I was thinking already. But to answer your specific question: it's my belief that the drippings just add good 'ole flavor. This is what I don't want to miss.
