Bleached or Unbleached?

Does it matter which one is used when making a pizza dough?

not really.

bleaching just makes the flour 'whiter'

actually flour will 'bleach itself' with proper aging & conditions, but many mills artificially speed up the process.

bromates are one compound used; there are 'health concerns' about bromated flour - some European countries have banned its use altogether.
