Books on Cooking

Could I get your opinions on which is the best book on cooking? Not cookbooks that have recipies, but give more details on the hows and whys???
 
Thanks Ironchef, I just called Barnes and Noble, they are holding me a copy.
 
Because I do not care that my books be new, Amazon is one of my best friends (not only cookbooks, but I read voraciously, 3-5 a week of novels, history, bio)(what was my school system thinking when they taught me to speed read at age 10?)(thank heaven for libraries). To me the best book is still Joy of Cooking. Yes, it is recipes, but also a little bit of everything else thrown in.
 
I love McGee and On Food and Cooking, but it's pretty technical.

IMO a much more accessible book is Cookwise by Shirley Corriher. It also covers a wider variety of subjects

What Einstein Told His Cook (and it's sequel II) is a fantastic read too, as is How To Read A French Fry, but they are compilations of newspaper columns and the onfo isn't organized as thoroughly as Cookwise and, again, not as comprehensive.
