And from my DH when I offered to serve him some: "No thanks, I don't like pudding, but have you tried that great apricot cake-y thing? It's awesome" (yeah... I know, but I picked him.....)

<snicker> I have one of those, too!

Great, It sure sounds good and I'd like to try it.

A quick little note: doing the same batch, but in muffin tins, coated in butter and dusted with something like crushed cornflakes, or rice krispies, or my fave; Lightly crushed cap'n Crunch, makes for a GREAT single service dessert, or breakfast, that can be used for a plated dinner/breakfast, or just to serve for dessert with the fam.

leftover "bulk" made bread pudding, can be dredged in eggs, vanilla, a lil nutmeg, cinnamon, and cream, a la french toast, and makes AWESOME pudding toast. If it was GREAT as bread pudding, it is gonna make even BETTER "French" Toast!
