Here are a few recipes I thought would be nice for Brunch:
Papaya and Raspberries with Lime(makes 6 servings)
3 ripe papayas, about 1 pound (480 g) each, peeled and seeded
1 cup (120 g) fresh raspberries
juice and grated zest of two small limes
sugar substitute, to taste
Cut the peeled and seeded papayas in half lengthwise. Cut into slices and arrange in individual dessert dishes.
Divide the raspberries among the dishes. Drizzle with lime juice. Sprinkle with lime zest and a small amount of sugar substitute. Taste and add more sugar substitute, if needed. Serve at once.
Per serving: 72 calories (4% calories from fat), 1 g protein, trace total fat (0 saturated fat), 18 g carbohydrate, 4 g dietary fiber, 0 cholesterol, 5 mg sodium
Diabetic exchanges: 1 carbohydrate (fruit)
Sparkling Citrus Punch
Easy to make, this recipe makes plenty--enough to quench the thirst of a large gathering of friends and family! :D
2 cups cold water
1/2 can (12-ounce size) frozen tangerine or orange juice concentrate, thawed
1/2 can (12-ounce size) frozen grapefruit juice concentrate, thawed
1 bottle (1 liter) sparkling water, chilled
1. Mix all ingredients in punch bowl.
2. Serve over ice.
4 oz. butter - melted
1.5 pints oysters - drained
4 green onions - chopped finely
3 cloves garlic - minced
˝ lb. fresh lump crabmeat
˝ cup bread crumbs
Salt and pepper to taste
Melt butter in a skillet. Add oysters and cook until dry. Add onions and garlic and cook slowly for at least 10 minutes. Fold in crabmeat and crumbs. Simmer 5 minutes more. Add salt and pepper to taste.
Oyster & Artichoke Soup
5 6 ounce cans of artichokes
1 Pound of butter
1 Quart of heavy cream
1 Cup of all purpose white flour
3 Tablespoons chicken soup base
2 Ounces curly parsley
2 Ounces green onions
2 Cups oysters chopped
1 Tablespoon granulated garlic
3 Quarts warm water
Juice from oysters
In a pot set over low heat add butter and flour, stirring with a whisk to make a blond Roux.
Then add the water and heavy cream, let simmer for 10 minutes.
Strain artichokes and add to the pot, then add oysters.
Simmer for 20 minutes, constantly stirring.
Then add remaining ingredients and simmer to desired consistency.
Serves 10 to 15.
