My mother used to make a dish called cacooch. It has zucchini, tomatoes and whatever. It was finished with cheese and egg. Eaten with a piece of bread. Anyone ever heard of this?

My Italian mother made this often and I still do today. Any squash is called "cacooch" but that's a form of slang. The actual word is cacuzza, the z's pronounced as they are in "pizza." A zucchini by any name is still great eating.
 
I make a casserole that sounds kind of similar:


6 med zucchini diced (about 6 cups)
4 tbsp melted butter (divided)
2 med tomatoes diced
1 cup shredded cheddar
1 cup cubed velveeta
1 cup large croutons (sometimes I just tear up any bread i have)
2 eggs beaten
2 tbsp dried minced onion
1 tbsp dried parsely
1/2 tsp garlic powder
1/2 tsp each salt and pepper


-sautee zucchini in 2 tbsp butter until crisp tender, drain well
-combine zucchini and all remaining ingreadients well
-transfer to baking dish
-bake at 350 for about 30 min til bubbly
