Check your honey (not your sweetheart)

I'm always suspicious of pasteurized honey. If it's pure honey, there is no good reason to pasteurize it.

I assume that they heat it and filter it to keep it from crystallizing, since many people don't want thick crystallized honey. If it's thick and it crystallizes, to me that's a good sign.
