Hi

I came across the book of NOMA (Rene Reddzepi) and he says at one point "15g of chicken glace".

What is that? Some gelatine? Chicken with sugar? Can somebody explain I am not natural english speaking thats is tje reason I dont understand.

Here's a link for chicken glace. It's basically chicken stock that has been greatly reduced until it's a thick, glossy paste with intense flavor.
