I checked the recipe in The Joy Of Cooking. There is nothing wrong with you mixing olive oil and butter together. If you followed the rest of the recipe it should have come out good. The problem would most likely be in the cream. The cream should always be added last and NEVER brought to a boil. Cream should never be kept on the heat too long or boiled because this could sour the cream.

Don't give up on it try it again!

Overcooking almost anything can produce undesirable results. The op mentioned overcooking a couple of times in her first post.

Wine is the food that completes the meal.

Another reason for the bitterness could be that the cream was spoiled.
