Cornstarch and ice cream

I was surfing today for recipes for maple syrup ice cream. Most of the ones were very similar (cream, milk, egg yolks, sugar) but one of them had corn starch. Why would you add corn starch to ice cream?

From what I have read; the cornstarch adds creaminess to the ice cream.

I've read the same. I think there are some Mark Bittman recipes out there for cornstarch ice cream. I am thinking of giving it a try sometime.
