Dh's chipotle grilled cheese

My dh made this for me tonight and we split it. Very good.

For one sandwich:

Two slices of garlic cheddar sour dough (we got ours from Trader Joes)
2 slices of chipotle cheddar cheese
2 tbs mayo

Spread some mayo on the both sides of each peice of bread. Top one slice of the bread with the cheese add the other slice and grill till the cheese is melted.

Yes he only used mayo grill the sandwiches, no extra butter in the pan at all and it came out perfect! The bread was perfectly toasted and the chipotle cheddar cheese (also from trader joes) has so much flavor!

If you can't find chipotle cheddar cheese you can make a little chipotle mayo by processing a cup of mayo with one canned seeded chipotle pepper and a bit of the canned liquid.

Love Trader Joe's, love chipotle cheddar, love mayo (one of the 3 things that's ALWAYS in my fridge)

I've had a hankering for grilled cheese and tomato soup, so this will be perfect!
