Hello all , i am making a cooking folder for myself i was wondering if anyone knew of any good glossarys for herbs , spices , antipasti and sausages and oriental ingredients.

Cook's Thesaurus should have that covered. Just type in cheese in the search box and you will be given choices such as soft cheeses, hard cheeses, etc. It works for just about everything.
