Green Tomato Bread:

2 cups sugar
1 cup vegetable oil
3 tsp vanilla
3 cups flour
1 tsp salt
1/4 tsp baking powder
2 tsp cinnamon
1 tsp cloves
2 cups finely chopped green tomatoes

Heat oven to 325°. Beat eggs until fluffy. Add sugar, oil, vanilla, salt, baking powder and spices. Mix well. Stir in flour. Mix well. Fold in tomatoes. Bake in 2 greased and floured loaf pans for 1 hour or until toothpick comes out clean... Makes two loaves.

Juliv, someone on a one of these boards asked for uses for green tomatoes. Unfortunately I can't remember which board. I know it's too late for his/her crop, mentioned in message, but if I run onto it, would you mind if I posted your recipe, for his/her future reference? That tomato bread recipe sounds great. Makes me wish DH could raise a decent tomato crop. Tomatoes make me long for Indiana, where they have flavor and don't have the pox.
