I just made some fish batter for my tilapia fillets. I used 1/4 cup of flour, 1/4 cup of milk, one beaten egg, and some baking soda. the batter turned out to be too runny, that's problem number 1. the second problem is, the batter didn't adhere to the fish.

should i have used more eggs or flour to make it thicker? also, what can i do to make the batter "stick" to the fish?

apologies if in the wrong forum. there are so many, i dont know where to post my question.

You need dredge your fish in flour. Batter will not stick to wet fish!

Beer Batter

Ingredients:
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 eggs
  • 12 ounces beer

Directions:

Mix all ingredients in large bowl, beat until smooth. Dredge fish in seasoned flour, dip in batter and drop into boiling oil
