ISO Help with Rockfish

Will Wild Pacific Rockfish make good fillets for Fish Tacos? I was thinking cilantro and lime marinade.

Where we go in Mexico, they use any firm fish, mahi, grouper, dorado, etc. for fish tacos. I'm not familiar with rockfish, but I would bet they would make decent fish tacos. I think your idea of citrus and cilantro will be great. Our fave beach club sautes small pieces of fillet of anything in lard (no breading), maybe coconut oil, though you can get it deep fried. Served with queso, refried beans, pickled onions, along with salsa fresco.

I marinated for 30 min in fresh cilantro and lime juice with honey and sea salt. Baked in the toaster oven until 145°F internal temp. Tastes fantastic. Going to chill it and fix up some cumin, cream, napa cabbage and onion slaw tomorrow. Warm the fish, wrap it and the slaw in warm corn tortillas...I will likely mix up a tomatillo and avocado salsa, too.
